Caramel Apple Muffins

In a large bowl, sift together:
2 ½ cups flour
¾ cup white sugar
4 teaspoons baking powder
2 tsp cinnamon
½ tsp salt

In a separate bowl whisk together until well combined

½ cup vegetable oil
1/3 cup sour cream
1 cup milk
2 eggs
1 tsp vanilla extract

Add the mixture to the dry ingredients and fold in well. During the last few turns of folding add:

2 large apples, peeled, cored and cut in chunks
30 soft caramel candies cut in quarters

Do not over mix your batter or your finished muffin texture will be too heavy and dense. Mix only enough to incorporate the dry ingredients. Spoon batter into greased or paper lined muffin tins and garnish tops with apple slices and caramel pieces if desired. Bake at 350 degrees F for 25-35 minutes, until a wooden toothpick inserted in the center comes out clean. Baking times will vary widely depending upon the size of your muffin tins. The toothpick test is the best way to determine if they are fully baked.

Cool on a wire rack. Makes 12-15 large muffins.

  2. Hi Lisa, this is not a terribly specific measurement. The recipe calls for 2 apples. I'd estimate that to be between a cup and a cup and a half depending on the size of the apples.Happy baking.

Hi,just wanted to say Thank you for sharing these wonderful, delicous recipes with the rest of the world. i have made quite a few of your recipes,and they always turn out great. i use mostly the dessert recipes,cause that's what i love to make. these muffins are like a little piece of heaven. I made them twice one day then the next,i got nothing but rave reviews. thnaks again,look forward to many more. my grandmother used to make a dessert,it was a cake. with a white icing,i think it was called either george washington cake,or washinton pie,not positive. but it was a type of white cake,with a jam filling and a white icing,would love to have the recipe again,loved it as a kid. not sure fi you have heard of it or not,but thought i would try. sorry for such a long comment. From one happy baker to another!
