Apple Upside Down Cake

This is one of those recipes that you make when "there's nothing in the house". You likely have all the ingredients on hand to whip this one up at any time.
6 apples, peeled cored and cut in large wedges
1/3 cup melted butter
2/3 cup brown sugar
1 tsp cinnamon

Mix the butter, brown sugar and cinnamon together and spread evenly in the bottom of a 10 inch round cake pan. Arrange the apple wedges in a single layer on top of the cinnamon sugar and butter mixture.

In a food processor, process together

1 cup flour
1 cup sugar
1 tsp baking powder
¼ cup butter, cut in small pieces

Process until the butter is incorporated into the dry ingredients, then add:

1 egg
1 tbsp vegetable oil
1 tsp vanilla extract
½ cup milk

Beat for another 1- 2 minutes and pour the batter over the apples in the prepared cake pan. Bake for 35-45 minutes at 350 degrees F or until a toothpick inserted in the center comes out clean. Allow the cake to rest in the pan for about 10-15 minutes. Run a knife around the outside of the pan to release the cake before inverting the pan onto a serving plate. Serve warm with ice cream or whipped cream.
