The in-laws called yesterday morning to announce their lunchtime arrival in 2 hours. (I gotta stop feeding these people! ;) )This is what I put together with what was on hand in my kitchen. This recipe easily slides into the quick and easy category. You can have this one on the table in a half hour which also makes it a healthy and delicious workday supper as well.
Start by preparing your garlic olive oil. In your smallest saucepan gently heat over medium low flame:
½ cup extra virgin olive oil
Add
4 whole cloves garlic and fry until golden brown
Remove fried garlic cloves and finely chop them.
In a sauté pan or medium saucepan over medium heat add
¼ cup butter
4 tbsp of the prepared garlic olive oil
6 fresh roma tomatoes chopped
Chopped fried garlic cloves, prepared earlier
½ cup black olives
3 tbsp chopped fresh tarragon (or 1 ½ tbsp dried tarragon)
3 tbsp chopped chives
1 tsp brown sugar
2 tbsp capers (optional)
Salt and pepper to season
Simmer together for only 5- 10 minutes.
For the Cod
1 ½ pounds cod, chopped into small evenly sized pieces
Mix together
1 cup flour
1 tsp salt
½ tsp black pepper
2 tbsp chopped chives
2 tbsp chopped tarragon
Dredge cod pieces in flour mix and pan fry over medium heat until golden brown in the previously prepared garlic olive oil ;only a couple of minutes per side.
Serve cod pieces and sauce over fresh fettuccine and top with freshly grated Parmesan cheese.
