Serves 46 medium carrots, peeled and cut into sticks or slices
2 tbsp chopped fresh mint
1/4 tsp white pepper
3 tbsp honey
3 tbsp olive oil
Toss all together and turn onto a baking pan in a single layer. Bake at 375 degrees F for about 30 minutes or until carrots are fork tender. Toss carrots in pan half way though roasting.
These are great! The only changes I made were to use a tbsp less honey (my fresh-picked Ladle Cove carrots are sweeter than the average carrot)and black pepper. Thanks!
