Blueberry Apple Upside Down Cake

With a prep time of only about 15 minutes excluding baking time and the fact that it is best served warm, this is another of those crunch-time dessert dishes that are really useful in your recipe repetoire.
Preheat oven to 350 degrees F.

In the bottom of a 9 inch square baking dish combine
¼ cup melted butter
½ cup brown sugar
1 tsp cinnamon
½ tsp nutmeg
Stir until well combined and spread evenly in bottom of the pan. Arrange in a single layer on the top of the cinnamon sugar mixture:

4 medium sized apples, peeled, cored and sliced

Sprinkle evenly over apples:
¾ cup blueberries
For the cake:
Cream
½ cup butter
½ cup sugar
Add
2 eggs, one at a time
2 tsp vanilla extract
In a separate bowl sift together:
2 cups flour
2 tsp baking powder

Add dry ingredients to the creamed mixture alternately with
1 cup soured milk
beginning and ending with the dry ingredients.

Pour cake batter evenly over the prepared fruits and bake at 350 degrees F for 45 - 60minutes or until toothpick inserted in center of the cake comes out clean.
Serve warm with ice cream or vanilla flavoured whipped cream.
SERVES 9 -12

  1. I saw "Prinkle evenly over apples:", and I thought that "prinkle" must be one of those unique NF words that the rest of the world has not caught onto yet. It's a good word!

  2. LOL! Thanks for the catch Margaret! Not as emabarrassing when I described one dish as "...a favourite at out house" instead of "our" house. Spell check does not cure all, hey?

    Thanks for visiting!
